HOMEMADE MAPLE GRANOLA

*Makes about 2 quarts of granola

 

Ingredients

 

  • 3 ½ cups rolled oats
  • 1 cup of pecans, walnuts, or hazelnuts
  • ½ cup olive oil
  • ½ cup of Coombs Maple Syrup
  • ½ cup packed brown sugar
  • ¼ cup sesame seeds
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • 1 tsp salt
  • 1 cup dried unsweetened coconut chips
  • ¾ cup of golden raisins

 

Preheat oven to 300℉. In a large bowl, combine all ingredients except golden raisins. Spread mixture evenly on a large sheet pan and bake for 40 minutes, stirring a few times so the granola toasts evenly.

 

After 40 minutes, add the golden raisins and bake for an additional 10 minutes. Cool granola completely before storing in an airtight container.
